I’d returned from a week hiking in Newfoundland and, faced with a bare fridge and a radical change in weather, I was glad to be able to cobble together a summery lobster salad mixed with niblets of sweet corn and a handful of herbs plucked from the garden. I’d spent so much time sampling traditional cod dishes while in Newfoundland, I never got around to their local lobster and came home with a craving for just this, one of my favorite dishes of the season.
Local ingredients — Lobster from Sanders Fish Market, local corn from Golden Harvest, salad greens from Generation Farm, and herbs from the garden.

Something magical happens with this combination of ingredients when it’s just dressed with really good olive oil and lemon juice plus some zest. The salad greens are left as they are, and soak up the extra juices. Equally good tossed with some fresh pasta!

Wow! I’m hungry, and I’m at work. Nothing much for lunch around here except Chipotle and second-rate Indian buffet restaurants.
I’m lucky to have picked lobster available (shrimp would be a nice substitute), and on sultry days like this one, I don’t even bother to cook the corn — just assemble and eat!
What an incredible summery salad as a welcome home meal. Fresh uncooked corn is a staple around our house. Nothing better in my opinion.
