I spent the weekend attending a workshop on “Breakfast Breads and Pastry” with Chef Ciril Hitz, hosted by the Stone Turtle Baking and Cooking School in Lyman, Maine. The hands-on class was fast paced, and the amount of baked goods we produced was staggering. Both Ciril, who holds workshops in Rehoboth, Massachusetts, and Michael Jubinsky at Stone Turtle are outstanding teachers of the craft; class schedules are available on their websites, and are suitable for home bakers as well as aspiring professionals.
